   Southwestern Indigenous peoples ground mesquite pods into sweet flour for cakes and traditional horno bread; Apache and Pima groups fermented the seeds into a pinole beverage.

   The word "mesquite" is a Spanish adaptation of the Aztec Nahuatl name "mizquitl"; the dense wood is famously used in the Southwest to impart smoky flavor to grilled meats.
